About That Meal Prep Hype

In an attempt to restructure my life, meal prep is Sundays (Buy food) and Mondays (Cook food). So far, this is Week No. 2 of making this schedule happen (I have also added to my schedule, GYM workout Mondays after I cook-- #extra AND washing all the dishes after my crazy cooking mess... yes, I know most people do their dishes right after they cook, but I don't so... now, I am trying to make it a habit... did you know it takes 21 days to make something into a habit?) Two meals. One prepped to grab and then the other cooked but ready to serve when needed. This is meal no. 2. My #vegetarian version of a Vietnamese #vermicillibowl with Lemongrass-Ginger Portebello Mushrooms with sprouts, kale, carrots, cucumbers, green onions, red bell peppers, kimchi, mint, cilantro, jalapeno peppers (I forgot to add Basil) + adding fried egg and sriracha before we head the door. All organic veggies! For the record, I am not vegetarian but am trying to be more plant-based. So, I rarely cook meat at home. Let's hope I keep this up. Saving money one home cooked meal at a time. Haha
